The 22-year-old registered his eighth goal of the season - his seventh in the Premier League - in the 2-0 win over Sheffield United last Saturday.
And he toasted back-to-back top-flight wins for the Blues by hitting out at his and the club's doubters.
A £32million summer arrival from Villarreal, pundits have argued whether the Senegal international is good enough to lead Chelsea's line, with the forward guilty of being wasteful in front of goal.
Asked how he sums up his season so far, Jackson, who almost joined Bournemouth in January, said: "It is OK.
"It is not what I was going for, though it is my first season, so I am happy, although everybody is talking s***, I am very happy I don't care what people say.

"It is just people who don't know about football. I will just continue to play more games and score more goals for the team.
"I should have scored more because I have missed some chances. The Premier League is different from LaLiga, where I came from. I am trying to adapt myself.
"It is not an excuse. I am trying to continue to work harder and listen to people.

Jackson has acknowledged that it has been a burden in being Chelsea's main striker this campaign in Christopher Nkunku's absence and Armando Broja's regular setbacks.
But he is drawing inspiration from ex-Blues duo Mohamed Salah and Kevin De Bruyne, who have become two of the Premier League's best ever players after slow starts to life at Stamford Bridge.
Scott Minto urges Chelsea fans to be patient with Nicolas Jackson as his start at the club is compared to Blues legend Didier Drogba
Hailing boss Mauricio Pochettino, he remarked: "He has been with a lot of young players, so he motivates me every day and tells me to go and he has seen people worse than me [in the past] and they are now big players.
"De Bruyne was here and Salah was here. They struggled here and are now big players.
"They didn't listen to people who don't know football, he keeps telling me that. He knows football; they don't know football, so I don't listen to them.
"We don't come here for holidays. We try to win every game, we try to win for the coach and giving us motivation every day, every game because he has passed through this situation.
"We are very happy that he is doing that and helping the young players. We are all new and we are all going through it and we are going to win games."
