The Irishman grabbed his first with a fine finish from just inside the box after Swedish sensation Dejan Kulusevski opened the scoring, pouncing on a defensive error.
Spanish winger Bryan Gil, who starred in Champions League cameos earlier in the campaign, got the third.
He fired home after a Kulusevski pull-back, with Djed Spence, who was bright throughout, and Harvey White working well in the build-up.

And before a raft of second-half changes from Spurs, Doherty added a second, nodding home barely opposed from Kulusevski's corner.
Davinson Sanchez, Japhet Tanganga, Oliver Skipp, and Yves Bissouma were the other first-team stars starting.

Young centre-back Charlie Sayers impressed on the left of a back-three while Brandon Austin started in goal before being replaced by Alfie Whiteman.
Spurs return to Premier League action against Brentford in west London on Boxing Day.
But, before that encounter, they will play a friendly with OGC Nice at the Tottenham Hotspur Stadium on December 21.
